Three Bean Chilli

About the Recipe

Ingredients

1 onion, finely diced

4 cloves garlic, minced

1 bunch spring onions, finely sliced

3 carrots, finely diced 

3 stalks celery, finely diced

1/2 a pack of mushrooms, sliced

1 bunch coriander, finely diced

1 chilli, finely diced 

1 tsp chilli powder flakes

2 tsp paprika

2 tsp cumin 

2 tsp cocoa powder

1 lime, juiced

A glug of apple cider vinegar

1 can chickpeas 

1 can black beans 

1 can white beans

1-2 can chopped tomatoes

500ml vegetable stock

Salt and pepper to taste

Preparation

  1. Cook the onion, garlic, spring onions, carrots, celery, and chillies to a pot and fry for 10-15 minutes or until the onions are translucent


  2. Add the rest of ingredients to the pot, bring to the boil.

  3. Turn the heat down, put a lid on, and simmer for half an hour.
