About the Recipe

This literally takes 10 minutes to make and adds some really nice freshness to any meal. I had it on top of my pan con pimientos, but goes really nicely on anything from lamb to salads. Best prepared ahead of use so the flavours get a chance to develop!

Ingredients

  • 1 bunch of basil, finely chopped

  • 1 bunch of coriander, finely chopped

  • 1/2 bunch of mint, finely chopped

  • 2 anchovies, finely chopped

  • 2 tsp capers, finely chopped

  • 50ml olive oil

  • Juice of half a lemon

  • 1 tsp Dijon mustard

  • Salt to taste

Preparation

  1. Finely chop the herbs and add to a bowl - I find chopping gives a much better texture than using a food processor

  2. Finely chop the capers and anchovies and use the blade of a chefs knife to turn into a paste - add to herbs with the oil, lemon juice, and mustard

  3. Stir well and season to taste
