About the Recipe
Ingredients
500g red lentils
2 red onions, finely sliced
1 chilli, finely chopped
1 tsp cumin powder
1 tsp coriander powder
1 tsp smoked paprika
1/2 tsp turmeric powder
3 cloves garlic, crushed
2 tbsp tomato paste
1 small pack of tomatoes
500ml umami or vegetable stock
1 handful of coriander, stalks and leaves separated and finely chopped
Salt and pepper to taste
Preparation
Wash your lentils, cook them according to the packet, and leave to the side. If you're feeling fancy and have time, use whole cumin and coriander seeds. Toast them in a pan until fragrant and blend for some extra flavour.
Add your onions and chilli to a saucepan and sweat for 10 minutes until translucent. Add your spices, garlic, and tomatoes, tomato paste, and coriander stalks and mix together. Cook for a few minuteds until fragrant.
Add your lentils and coat with spice mix. Add your hot stock to the mix and bring to a simmer. The cooking time here doesn't matter too much. Keep seasoning and tasting with salt and pepper. Add extra spices if you like. Once you're happy with the consistency and texture of the lentils you can take off the heat and serve up. Garnish with the coriander leaves, and yoghurt, cream, kefir if you fancy.
