About the Recipe
If you ever happen to have a load of apples lying about and you're not sure what to do with them, this is your answer! Or if you fancy a unique and delicious jam, but don't have any apples, its definitely worth going and buying some apples specifically for this! Granny Smith and Honey crisp work very well!
Ingredients
10 apples
3 1/2 cups granulated sugar
7 cardamom pods, crushed
3 cloves, crushed
Juice of 3 lemons
Preparation
Full a large bowl with cold water and the juice of one lemon
Peel, core, and quarter the apples and add them to the lemon water to stop them turning brown
Remove the apples from the water and finely dice them. Doesn’t have to be too fine, or leave them chunky if you want a chunkier jam!
Add the apples to a pan with the sugar, spices and the juice of the two remaining lemons
Bring to a boil, leaving uncovered and stirring often , for about 40 minutes until a nice thick consistency. You can leave it chunky or blend at this point if you want a smooth jam
Being careful of the hot jam, ladle it into clean jars and let cool before putting in the fridge
